Executive Chef Nicolas Montanez is a seasoned professional of the Napa Valley. He was one of the first persons employed by the Calistoga Inn in 1989 and remained a central part of the kitchen for ten years. Living the American dream, Nicolas then ventured to Hyde Park, New York to earn his diploma from the Culinary Institute of America (CIA). When he returned to the Valley in 2001, he garnered the position of sous chef for the CIA's Wine Spectator Restaurant in St. Helena, Napa Valley, which he held for several years. Furthering his development & career, he then accepted the position of executive hotel & banquet chef for the esteemed Villagio Resort & Spa in Yountville. Chef Nic has now come full circle and returned to his original home, the Calistoga Inn Restaurant & Brewery, and taken the helm as executive chef.
